Hello friends! I’m hoping that wherever you are you had nice Spring weather today. Here in Minnesota we are recovering from about 6 inches of snow. SNOW! It’s almost April for goodness sake! We’re all really hoping we won’t have to see any of this stuff again for a long time!

It’s been almost 2 weeks since I tried skiing for the first time, and my bruises are still healing! There were 13 of us who got together for that weekend, and naturally I wanted to bring some sort of baked good. I wanted something delicious, easy to make and transport, and also something that would easily feed so many people.

Just like Jen and her husband, Derek and I are infatuated with cookie dough. Our favorite recipe on this site is hands down these cookie dough cupcakes. This cookie dough ice cream cake was also a big hit. As soon as I saw this cookie dough brownie recipe it was a no-brainer, they had to be made!

Jen made her brownies from scratch, which you could certainly do. I was short on time so I chose to use a box mix. Make sure you use a mix meant for a 9×13 inch pan, otherwise cut the cookie dough recipe in half. I know it’s terrible, but I have no problems with eating raw cookie dough. I don’t even want to guess at the amount of it I’ve eaten over my lifetime. However, if you’re planning on consuming several brownies (which you will, trust me), you don’t have to worry about salmonella because the cookie dough is eggless. Naturally I was sampling it before spreading it on the brownies, and I honestly thought the taste was a little bland, but when combined with the taste of the brownie the flavor is to die for! I had a really hard time not eating the entire pan, and as I’m sitting here typing this I am getting a craving for them again. Enjoy!

1 box of brownie mix (family size)
Ingredients on box
1 ½ cups (3 sticks) salted butter, room temperature
1 ½ cups brown sugar
⅔ cup granulated sugar
9 Tbsp milk
3 cups all purpose flour
2 cups chocolate chips

Preheat oven to 350 degrees. Prepare brownies according to directions on box and bake as directed.

To make the cookie dough, cream together the butter, brown sugar and granulated sugar until light and fluffy. Beat in milk. Add in flour and mix until combined. Stir in chocolate chips.

Once brownies have completely cooled spread the cookie dough on top. Place in freezer for 20-30 minutes or in refrigerator for several hours to set.

Texas Fudge Brownies

In case you haven’t noticed, I bake. I bake a lot! In the process of all this baking, I have decided I need to be on a quest to find the perfect brownie. Also the perfect chocolate chip cookie, but that’s a whole separate post.

This past summer I tried out my first homemade brownie recipe. They were definitely a good, cake like brownie, but since then I think I have discovered that for me, the perfect brownie is fudgy. Very fudgy.

The moment I saw these brownies from Amy I knew I would need to make them, and I knew they would be great. The recipe certainly didn’t disappoint. The fudgy frosting on top of this recipe is what makes these brownies amazing for me! I’ve already been thinking about other recipes I can use it in, and honestly, I may just top all of my brownies with it from now on! The hardest part was having to wait for the frosting to cool, but trust me these are worth the wait. Enjoy!

Texas Fudge Brownies

2 eggs
Pinch of salt
1 cup sugar
1 tsp vanilla
⅓ cup semisweet chocolate chips
1 stick margarine
½ cup all purpose flour

Frosting:
¼ cup (1/2 stick) salted butter
¼ cup milk
2 Tbsp unsweetened cocoa powder
2 cups powdered sugar

Preheat oven to 350 degrees. Beat together eggs and salt until light and frothy. Add in sugar and mix well. Add vanilla. In a microwave safe bowl melt together the margarine and chocolate chips (approximately 30 seconds). Add chocolate to egg mixture while mixer is running. Mix in flour just until combined. Pour into greased 8×8 inch baking pan. Bake 20-25 minutes.

To make frosting, heat butter, milk and cocoa over medium high heat. Stir constantly and bring to a boil. Add in powdered sugar and stir until smooth. Pour over hot brownies. Cool completely before serving.

Candy Cane Kiss Brownies

When I love things, I want to share them with people. Don’t you? For instance, I love Glee. I’m not afraid to admit that I’m a Gleek. There are two Glee CD’s on my Christmas list and you can be darn sure that if I don’t get them I will be purchasing them first thing on December 27th.

My heart is filled with love now after watching the Glee Christmas episode, so I wanted to share some love with you.

I have also found a new place in my heart for candy cane kisses. I kept seeing fellow food bloggers using pumpkin kisses earlier this fall and was utterly devastated when I couldn’t find any in the FIVE different stores I searched. Needless to say as soon as I saw these beauties I snatched them up! Peppermint and chocolate go together almost as easily peanut butter and chocolate, so I knew brownies were the way to go.

This recipe is seriously the easiest (and shortest) I have ever made. Brownie mix + ingredients on box + candy cane kisses. That’s it. You could certainly substitute for homemade brownies, which I considered four about…oh, 4 seconds. I am obviously not above using box mixes and this was no exception. My only complaint about these brownies was that the kisses melted down a bit more than I thought they would so I didn’t get the pretty pictures I envisioned, but the taste was still fabulous. Enjoy!

1 box of Brownie mix + ingredients on back
1 package Candy Cane Kisses

Preheat oven to 350 degrees. Prepare brownies according to directions on box. Unwrap candy cane kisses and place upright in greased 9×9 inch baking pan. Pour batter over kisses. Bake according to directions. Cool completely before cutting and serving.

PS: Did you notice how all of the lines of the kisses are lined up in relatively the same direction? Yes, I arranged them that way. That’s my OCD hard at work.

PPS: My other love right now? Marry You by Bruno Mars. iTunes it. You won’t be disappointed.

My first made from scratch brownies

I’m sure I’m not the only one out there, but I have never made brownies from scratch before. Only from a box! Shocked? Don’t be. I have no problems with brownies or cake mix from a box, but since I run a baking blog, I figure I need to branch out at some point, right? I guess there is no better place to start that Martha.

This recipe has started something. Something that could be dangerous. And time consuming. But I’m looking forward to it. They have started me on the quest for the “perfect” brownie. Now I guess a better way to phrase that would be my perfect brownie (yet another benefit of running your own blog). I will be honest with you, I don’t think these are it, but they certainly are a good start. Martha’s recipe called for either bittersweet or semisweet chocolate, and I felt semisweet was the better option. Personally I have come to realize that I like milk chocolate much more than semi-sweet, and would really like to add that to this recipe because I think then these could be very close to “perfect”. These are actually called “super-fudgy brownies”, so I was expecting these to be, well, very “fudgy”. Maybe I did something wrong, but these were definitely more cake like. This was not a bad thing by any means, just a little misleading. The semisweet chocolate also made them very rich so I was pleased with just one (until an hour later when I got a craving again)! Overall I was impressed with how easy it is to make homemade brownies (but still more work than adding eggs, oil, and water). I am truly looking forward to making more homemade brownies on my quest, and you can be sure I will keep you posted ;)

Martha Stewart Super Fudgy Brownies

1 cup flour
1/4 cup unsweetened cocoa powder
1/2 tsp baking powder
1/2 tsp salt
8 Tbsp (1 stick) salted butter
8 ounces semisweet chocolate, chopped into pieces
1 1/4 cup sugar
3 eggs

Preheat oven to 350 degrees. In a medium sized bowl combine flour, cocoa powder, baking powder and salt. Set aside. Place butter and chocolate in heat-resistant bowl, and place bowl over saucepan of boiling water (to create a double boiler). Heat and stir until mixture is smooth. Remove bowl from stove. Add in sugar, and then eggs, then add flour mixture. Place parchment paper into 9 inch square baking pan. Grease with either butter or cooking spray. Pour brownie batter into pan and place in oven. Bake for 50-60 minutes, or until toothpick inserted into center comes out clean.

S’more Stuffed Brownies

You guys remember how much I like s’mores right? It seems like you can turn any dessert into a s’mores dessert, but when I saw this recipe from Jenny, I knew I had to try it out. I also knew they would taste fabulous (like all of her stuff), and boy was I right! I have always enjoyed eating brownies, but until now I have made them very infrequently. Let’s just say this recipe will change that!

This recipe is incredibly easy, which always scores points in my book. The ingredients are minimal and so simple to put together. You could use any brownie recipe you like, but a box works fine for me. When you bite into one of these treats, you get the full taste of both the s’more and the brownie, which is an incredible combination. Now that I am baking so much I try to stick to the “only sample one” rule, but I had to break it for these! They have definitely moved to the top of my all-time favorites. Enjoy!

S’more Stuffed Brownies

1 box of Brownie Mix + ingredients listed on back
4 1/2 graham crackers
4 full size Hershey Bars
16 large marshmallows

Preheat oven to 350 degrees. Prepare brownies according to directions. Place aluminum foil in 8 x 8 inch baking pan and coat with cooking spray. Pour half of the brownie batter into the pan. Place graham crackers over brownie mix, then place Hershey bars over graham crackers. Place marshmallows on top of candy bars and pour remaining brownie batter on top. Bake for about 45 minutes or until toothpick inserted into center comes out clean. Let cool completely before cutting (if not you’ll have a gooey mess).
