Pickle Roll Ups

For those of you who live in the Midwest, you most likely know how amazing these are.

For anyone outside of the Midwest, I completely understand that you may be cringing a little right now. Pickles, and ham, and cream cheese? Gross!

Far from it!

I have been eating these for as long as I can remember. They are a staple at Christmas every year. At first I remember thinking the combination sounded quite disgusting, but there is nothing quite like it. Not only do I bring a dessert to every potluck at work, but I usually end up bringing these as well, and there are never leftovers. When I made these last time I realized I didn’t have the right pickles at home and had to send Derek to the store, but he said he would only go as long as he could eat five a few.

The procedure is really quite simple. Spread some cream cheese on a piece of ham. Roll the ham around a pickle, slice and serve. This is easiest to do if you use large dill pickles. You could use the baby dills, but I would serve them as a whole instead of slicing. You also need to make sure you buy ham that is in the shape of a rectangle. The round slices you get from the deli just won’t work very well. When slicing, I try to cut off the very ends of the pickle, since they don’t wrap well. I usually save these for snacking! You should be able to get 3-4 slices out of each pickle, depending on how big you make them. Enjoy!

10 slices of ham (rectangular in shape)
10 large dill pickles
2-3 ounces cream cheese

Using a paper towel, blot dry one piece of ham. Spread a thin layer of cream cheese on ham, then place a pickle at the edge. Roll and slice off ends. Slice remaining roll into 3-4 pieces. Repeat with remaining ingredients (you could make more or less depending on your needs). Chill until serving.

    I’m not a fan of ham, but I make these with tortillas, and can NEVER get them to look this good!! yours are perfectly round, mine always come out lopsided. (I have tried MANY times…)

    I’m almost part of the midwest (Oklahoma) ;) and these used to be my favorite thing at our staff lunches – the preacher’s wife always brought them.Thank you for reminding me about them. So, so good.

    I LOVE PICKLES!!! I’ve never seen it done this way, but many times have wrapped some lunchmeat around a pickle and enjoyed a tasty, salty snack! Yumm! Will definitely try these – would be fun to make with my kiddo! :)

    LOVE these – I make them with a little horseradish mixed with the cream cheese – yumo!!! I’ve also made them using deli roast beef, but my favorite is the cream cheese. I can NEVER make enough!

    MMMMMMM!! I as well have been enjoying these, as well as making them for as long as I can remember. The holidays are remembered making these for the family gatherings as a kid. Now as a adult Ill make them for a snack from time to time. The hubby loves that snack….

    Yes! These are so good. I’m from Kansas, and these are at just about every potluck I’ve been to. I’ve also seen them made with dill spears.

    I rarely see them with ham. I think they’re more commonly made with dried beef and, of course, you must use the Vlasic pickles in the refrigerated section.

    I’m from the Philly area and we have our own local twist on this.
    Lebanon bologna smeared with cream cheese and stuffed with a pickle. Always have it at Christmas time.

    Never thought to try with ham, can’t wait to start!

    i’ve made these for years. and were especially popular at office carryins. i inherited

    the pickle duty from a retiree.

    i’ve found that everyone will eat one. and only one, unless you use

    cold packed pickles. the kind stores keep on the meat section chilled.

    there is something about the crunch. and dill combination.

    I grew up in North Carolina, and my grandmother made Pickle Rings, which were pickles wrapped in white bread spread with a mixture of cream cheese, mayo, and grated onion, and sliced into rings. They were so wonderful, like little pickle tea sandwiches! We still make them at holidays.

    These are a family staple in my house at the holidays, but I have never heard of anyone else who makes them! Probably because I am from the Pacific Northwest but my grandparents are from the Midwest. Even my husband, whose family comes from Kentucky/Ohio, had never seen them before (but was quickly addicted!)
