I don’t know about you, but in my house we have a bit of an obsession with cookie dough. We have no problems with eating raw cookie dough around here, and these cookie dough cupcakes are one of my most popular and requested treats. When I got my ice cream maker for Christmas Derek told me right away that he wanted me to try cookie dough ice cream and when I found this recipe I knew it was “the one”.
I really like regular cookie dough ice cream with the chunks of cookie dough, but I always get dissappointed when the chunks are gone. The perfection of this recipe is that the ice cream itself tastes like cookie dough. GENIUS! I decided to throw in some chocolate chip cookie crumbles (I whipped up a quick batch but store bought would be fine too). If you happen to get a bite without any cookie pieces it doesn’t really matter, since you still get a cookie dough taste.
I’ll admit the ice cream doesn’t taste exactly like cookie dough, but very similar. The darki brown sugar and the browned butter flavors both really come through and make an amazing combination. Enjoy!
Chocolate Chip Cookie Dough Ice Cream
3 Tbsp salted butter
⅔ cup dark brown sugar
4 egg yolks
2 cups half and half
2 tsp vanilla
pinch of salt
1 cup whole milk
3-4 Chocolate chip cookies
In a small sauce pan heat the butter over medium high heat. Melt butter and keep stirring until it turns a deep golden brown in color. Do not burn. Add the half and half and heat until scalding (not quite boiling).
In a separate bowl whisk together the brown sugar and egg yolks until pale and fluffy. Pour about half of the butter mixture into the egg mixture, whisking constantly. Pour back into the saucepan and add the pinch of salt and vanilla. Heat to 170 degrees, or until a custard forms that coats the back of a spoon. Transfer the custard to a bowl and cover with plastic wrap. Refrigerate overnight to fully chill. Remove from the refrigerator and whisk in the up of milk. Pour into ice cream maker and freeze according to manufacturers directions. During the last few minutes of freezing add crumbled pieces of chocolate chip cookies (homemade or store bought). I used about 4 medium sized cookies.
