Pumpkin Cake Cookies with Maple Cinnamon Buttercream

Can you believe that Thanksgiving is coming up so fast? That means it’s time for more pumpkin recipes! Last year I tried a pumpkin cookie at a friend’s house and couldn’t believe how cake-like and delicious it was, so as soon as I saw this recipe I knew I had to make it. When it came time for the frosting my gut instinct kept telling me to go with maple instead of caramel (although I’m sure the caramel would be delicious too). I fell in love with the maple buttercream I made for these cupcakes and wanted to try it again, only this time I added a hint of cinnamon. All of the flavors in these cookies are amazing, and the texture is to die for. It’s like eating a mini cupcake in cookie form, how can you go wrong? Derek (aka Mr. I don’t like pumpkin) even said that these “weren’t bad”, which is a huge compliment coming from him (he usually either refuses to try or crinkles his nose in response to anything pumpkin). Naturally I contribute a dessert to his family’s huge Thanksgiving every year, and I think I have decided on these! Enjoy!

Pumpkin Cake Cookies with Maple Cinnamon Buttercream

Cookies:
1 cup (2 sticks) butter, room temperature
1/2 cup granulated sugar
1/2 cup brown sugar
1 cup canned pumpkin
1 egg
1 tsp vanilla
1 tsp baking soda
1 Tbsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp salt
2 cups all purpose flour

Buttercream:
1/2 cup (1 stick) butter, room temperature
1/2 tsp vanilla
2 cups powdered sugar
2 1/2 Tbsp milk
1/4 tsp maple flavoring
1/8 tsp cinnamon

Preheat oven to 350 degrees. In a medium sized bowl cream together butter, granulated sugar and brown sugar. Add egg and vanilla, then pumpkin. In a separate bowl combine together the baking soda, cinnamon, nutmeg, ginger, salt, and flour. Add to pumpkin mixture and mix well. Drop spoonfuls of dough onto cookie sheet lined with parchment paper. Bake for 10-12 minutes.

Meanwhile cream together butter and vanilla with an electric mixer. Add powdered sugar in one cup increments. Add milk, then maple flavoring and cinnamon. Cool cookies completely before frosting.
