Tracy-
I'm glad they turned out well for you! I did think about putting half an oreo at the bottom of each cupcake, and I will probably try that next time. I really went back and forth on which method to use, so I'm glad to know they turn out great either way!

I made these for my coworkers and they were a big hit. I made the cake from scratch using an old recipe I had. The addition of the Oreos took it over the top! One small suggestion: twist the tops off of 24 Oreos and put the bottoms (the side with the frosting) onto the bottom
of each cupcake before adding the batter. It's guaranteed Oreo goodness in every bite! Thanks for posting this idea!!

Hi Aimee! I took a cooking class at College for Kids this year and I learned a VERY good cookie salad recipe. Here is the recipe.....

1 pkg. of instant vanilla pudding
8 oz. Cool Whip
1 C Milk
Cookies: crushed into quarter or dime size pieces (ex. 2 rows of fudge strip or 1 1/2 rows or Oreos or 1 row of vanilla sandwich cookiesor any kind of cookies)

Pour the pudding in a large bowl and mix with milk. (with a hand mixer or wooden spoon) stir for 5 min. or so until think, add the crushed cookies and stir. Stir in the 8 oz. of Cool Whip. Serve.

I love the fact that you incorporated golden Oreos. I could make these cupcakes with my homemade strawberry cake recipe with a few adjustments. YUM! Thanks for the idea and the great photos!
